Globe valves are better than gate valves if you intend to use them for flow control. Valve sealing surfaces will not "wire draw" when operated partially open and will provide a positive shutoff. Globe valves, like gate valves, close slowly to prevent fluid hammer. You can throttle the flow and they will not leak under low pressure.  Flow and pressure control valves as well as hose bibbs generally use the globe pattern.
